This namazake uses “Yamada Nishiki”, the highest quality sake rice in Japan, polished down to 39%, removing over 60% of the outer layer of rice grains and keeping only the most essential rice core with the highest starch content. Through low-temperature fermentation and long, slow brewing, it ultimately creates a Junmai Daiginjo sake with a crisp and refreshing taste that doesn’t lose its rich flavor. The alcohol content of around 16% is comfortable and easy to drink, making it perfect for pairing with various dishes. As a namazake, freshness is its biggest feature.
